These are the perfect spring and summer time item! These are great as an appetizer or light meal. Of course, they are super flexible with your favorite ingredients. I would suggest adding all the fresh herbs and veggies listed plus any others you love!
These are paired with my Peanut Sauce that comes together within 5 minutes! This sauce can be used and stored up to 5 days and is great with noodles, tofu skewers, or as a salad dressing.
The ingredients for these Rainbow Spring Rolls are similar to the veggie slaw in the Buffalo Chickpea Wraps, Instant Rainbow Noodle Soup, and Asian Chopped Salad. If you are looking to meal plan, those are all great additions.
I do have a few pointers and tips for these wraps:
Spring Roll Wrappers – these are typically found near the tofu, but may also be located next to the noodles. You will want to use TWO of these wrappers at a time when making these rolls. The wrappers are THIN. Stack them right on top of each other, soak in warm water for 15-20 seconds making sure they are fully submerged. You want them pliable but not soggy.
Tofu – You can use firm or extra firm. You will only need about half a block thinly sliced. You can air fry the extras for a salad topper, snacked dipped in the peanut sauce, or add to the Instant Rainbow Noodle Soup
Noodles – I specified angel hair vermicelli rice noodles. These are my favorite to use, plus they work great in soup. However, they may be harder to find. Feel free to use any rice noodles or even the noodles from a ramen pack. Don’t fret, anything you can get your hands on will be fine.
Lettuce – I prefer the butter lettuce or Boston lettuce is great too. But so are romaine leaves! Again, anything you can get your hands on will be fine!
Veggies – I do recommend a head of red cabbage that you thinly slice or shred yourself. English cucumbers provide a little more crunch, and I like that. Any color bell pepper is fine. I like red because it adds an extra color. I bought packaged carrots that were already shredded, but feel free to shred your own.
Fresh Herbs – These add such flavor! I add mint, basil and cilantro! Mint is great for digestion and can help improve cold symptoms. Basil is great for your skin, digestion and helps to detox your body. Cilantro is great for heart health, your hair and skin along with increasing energy levels. So don’t hold yourself back here, feel free to get crazy.
The rolls are only good for about 24 hours after making them. So, they’re best enjoyed right away. However, you can prep all of these ingredients ahead of time (maybe not the noodles) so they come together super quickly!
